Day 213 Yummo Turkey Lettuce Wraps

I usually make these with finely chopped chicken breast but I had a severe migraine all day long at the office today. I decided on experimenting with ground turkey breast to speed up the process and the results were terrific. Mr. C and I actually both agreed that we liked them better with the ground turkey. I would highly recommend these to everyone! This is one of my favorite summer meals but mint is extremely easy to get your hands on in Louisville this week in celebration of the Kentucky Derby.

Here is the recipe:

1 pound ground turkey (or 1 pound chicken breast chopped very, very, very fine)
juice from two freshly squeezed limes
1 large shallot diced
2 green onions sliced (green & white parts)
1/2 cup shredded carrots
3 TBS Fresh Cilantro
3 TBS Fresh Mint
1 TBS fish sauce
1 TBS Soy sauce
1 tsp chili sauce (some times I use chili paste and if Mr. C is not eating I'll increase this to 1 TBS)
1 TBS rice or rice powder
Lettuce leaves to serve (I prefer Boston but selection was slim tonight so we ended up with romaine)

Put your rice in a dry skillet over medium heat, tossing every few minutes (make sure to constantly watch), until rice kernels are brown. Remove from heat. Crush to make powder or place in spice grinder to make a powder. You can also purchase rice powder in Asian food stores. Set aside. [I've used both instant and regular rice both work]

Brown your meat in a skillet. Remove from heat. Chop your shallot, green onion, cilantro and mint and place in large glass bowl. Add shredded carrots and meat.

Dressing:
In a separate container (I used a glass measuring cup), juice your limes, add fish sauce, soy sauce and chili sauce/paste. Pour this mixture over the meat mixture and toss. Sprinkle rice powder on top.

Serve with lettuce leaves. Wrap, roll-up and enjoy!!! YUM

The storm blew through when Mr. C was buying the ingredients at the store. The storm passing equaled migraine relief!!!! I'm so glad.

Day 112 - Ruffled Edge Checkbook Cover

Well I was feeling "ruffly" in the wee hours of the morning and attempted to make myself a new checkbook cover.  Let me just say this was the 1st and last of this style that will be created by me in this house.  Never have I run into something so simple that was so troublesome.

And I made these for a test run

Day 211

I couldn't wait to sew this.  This one isn't reversible.  Just lined with the same pink fabric as the ruffles and ties.
